Every so often, dolphins rise from the waves.’s coastal city of Salalah, the beach is the place to be.
Frankincense resin comes from the dried sap of scored trees and is burned as incense, distilled into oil and infused in food. Frankincense was one of the world’s first luxury products, once worth more than gold. In the city, Al-Husn Souk is overflowing with tubs of resin which are rough and cloudy like uncut diamonds. The Museum of Frankincense Land, which explains the varieties and the process of harvesting, is a 12-minute drive east of the souk.“I bring frankincense with me wherever I go, and I try to cook with it when I can,” says Dina Macki, a UK-based Omani chef who I meet at Al Baleed Resort.
Ms Macki is cooking at the hotel’s second-annual food festival, which attracts international, Michelin-endorsed chefs. Flanked by mountainous headlands and herds of camels, we find the 6km Mughsail Beach completely empty: where are the sun worshippers? “It’s not the Omani culture,” Mr Safrar says.
