Some healthy-sounding items lurking in your kitchen cupboard could in fact be ultra-processed foods masquerading as friend not foe, writes Clare Finney
Professor Spector agrees: “The ingredients used to make these foods, including emulsifiers and artificial sweeteners, modified starches and fats…interact with ourmicrobes and result in a more proinflammatory environment in our guts. They don’t contain the fibre from a whole food matrix or the healthy plant chemicals like polyphenols that our gut microbes need to thrive.
Of course, the companies mentioned above are not being accused of doing anything wrong, but nonetheless, some of them do manufacture UPFs, and that, combined with their influence, is what bothers van Tulleken.van Tulleken observes that it’s a rule of thumb that almost every food that comes with a health claim on the packet is a UPF. I ask Professor Spector what the worst culprits are when it comes to food which implies it’s healthy but which isn’t really.
Dr van Tulleken adds: “Unless you are an elite strength-based athlete, there is little need to consume lots of protein. We can only make so much muscle in a day, so if you’ve eaten lots of protein you turn it into either carbs or fat in your body. Of course, we need a small amount of protein every day, but you can eat that in the form of real food.
