Pharm Table hosts a multi-course dinner showcasing San Antonio flavors March 29 as part of the James Beard Foundation’s 10th annual Taste America culinary series.
It was tangy and bright, satisfying in the way only a hot dish can be, with every layer bringing a surprising new texture and flavor. The sweet balanced the spice, the fresh cilantro balanced the warmth, and the earthiness grounded it.
Before the restaurant opens, not only are employees prepping ingredients, those in the back and the front of house also are preparing mentally and physically for the day. Johnson leads breathing exercises and gratitude circles during preshifts, a chance to connect and reset. Putting people first sometimes means having to cover their shifts. Sometimes it means closing the restaurant, such as on Feb. 1, when an ice storm would have made traveling to the restaurant unsafe.Johnson opened Pharm Table, which began as a meal-subscription service, in the Radius Center lobby in 2015.
Born to American parents in Honduras, Johnson attended Alamo Heights High School and is inspired by the many places around the world she’s called home. “If you like meat, great, there’s a place at the table for everyone. It’s not a one-size-fits-all on nutrition," Johnson said."We have two dishes, za'atar coated salmon and grass-fed beef short rib, where meat stars. If you’ve going to eat a short rib, you might as well eat grass-fed, cooked only in its own fat, made with an in-house vegetable broth."
