Roll out the pastry - you can either cut it into 4 inch squares or, if you prefer, slice the pastry in half and make two large pasties.Add the spinach and cook for five minutes.Transfer the mixture to the food processor and spin for 10 seconds. Empty into a bowl and add mint, cottage cheese and salt and pepper.
Spoon the mixture on to the individual pastry squares or on the larger pasties, then brush the edges with water.Fold the pastry over and cut thin cuts in the pastry top with a sharp knife.
