I just ate the worst Caprese salad from a "fine foods" market and it inspired me to write this review. Bocconcini was used and guess what? No Balsamic. So this is your recipe for success: Good olive oil, balsamic vinegar that's a bit on the sweet side, and Buffalo mozzarella which is generally richer and more tender. I agree with everything else the recipe calls for.This is a perfect Summer salad.
