At Dos Luces, rebuilding began almost immediately thanks to a helpful landlord, and Belstock hopes to reopen by the weekend, as long as there is no structural damage."My landlord has been great," he says."He's a residential home builder as well and he had a crew working on a house not too far from the brewery." That team was able to build a temporary entrance at Dos Luces in just half a day. Structural inspections will begin on February 23.
Dos Luces has specialized in traditional pre-Columbian alcoholic beverages from North and South America, specifically chicha and pulque, since July 2018. He's looking forward to introducing a green-hued Shamrock Pulque for Saint Patrick's day that contains matcha, mint and green spirulina.
He will also be brewing Micaela Cornwine, named after Micaela Bastidas, an Incan leader and the wife of emperor Túpac Amaru, who is the namesake of Dos Luces's imperial black Chica. While insurance claims are in process, Belstock doesn't yet know what the total cost of this incident will be.
