Executive chef Sean Kerrigan, a former sous chef at Red the Steakhouse and the former Urban Farmer, both in downtown Cleveland, has taken over the kitchen at Eat at Betts in the Kimpton Schofield Hotel on East 9th Street.
CLEVELAND, Ohio – Executive chef Sean Kerrigan, a former sous chef at Red the Steakhouse and at the former Urban Farmer, both in downtown Cleveland, has taken over the kitchen at Eat at Betts in the Kimpton Schoefield Hotel on East 9th Street.Kerrigan will roll out a new menu in the new year. While favorites will remain, his goal is to elevate the menu’s comfort food approach. “I want my menu to scream Cleveland and be a more upscale and healthier version of comfort food,” he says.
Bowls and burgers will remain on the menu. The new pho bowl will use certified Angus beef and 100 percent buckwheat noodles, instead of the mixed wheat soba noodles. Fish and chips will be a “market price” option because the beer-battered fish will change each week with market availability. One week it might be striped bass, the next cod. Sides include hand-cut fries as well as homemade coleslaw and tartar sauce. Kerrigan’s secret to the beer batter is to use cake flour for a lighter result.
