Loved the idea of this recipe - wanted to use cleaner, easier digestible ingredients. Here's what I did: 1/2 cup melted coconut oil 1/2 buttermilk 2 large eggs 3/4 cup Panela unrefined cane sugar 1 cup Bulgarian yogurt 1/2 tsp sea salt 1/2 tsp Baking soda 1 tsp Baking powder 1 TBSP Thandia Masala 1 cup store bought granola 1 pint fresh blueberries 1 cup Einkorn flour 1 cup Pastry flour Followed the instructions.
I ended up cooking for about an hour and a half and it still wasn't totally done in the middle, and the bottom burned a bit - and I needed to use foil after 45 min so the top wouldn't burn. I think either a wider pan than 8x8 or a temperature higher than 350 is needed here. Pretty tasty otherwise, though a bit dense.Oil foil: As someone said earlier, the oil wasn’t in the original recipe then was added later.
