“We’ve made it through COVID, survived all that and now this happened,' Gibson’s Bar-B-Q co-owner Paula Mabry says after a fire causes extensive damage at the Huntsville restaurant. The Huntsville restaurant aims to reopen but is unsure when.

Gibson’s, address 3319 Memorial Pkwy. S.W., employs a staff of around 30. “They’re all kind of in limbo,” Mabry says. “Some of them have filed unemployment. Some of them have found other jobs. Because we’re still waiting to hear from insurance what’s going on with everything.”

She adds, “Right now our plans are to reopen, with the same quality, menu and great service we’ve always had. It might take six months, it might take nine or a year. We don’t know.” With pandemic-era supply chain issues, Mabry says, “the problem right now is getting supplies, building supplies and equipment, all that stuff.”Gibson’s was originally opened by Velma and Paul Hampton, Mabry’s grandparents, in 1956. Gibson’s Bar-B-Q is known for its breakfast, biscuits, pulled pork and ribs. The restaurant is also a longtime Memorial Parkway landmark, it’s red-lettered signage visible from the nearby overpass and beyond. The restaurant has a guest capacity of around 250. Mabry and Sanford aren’t just owners. They’re operators who typically spend many hours at the restaurant each week - when it’s open. Dealing with the temporary closure has been a challenge, Mabry says.

She misses Gibson’s customers. Especially the regulars who “come every morning when we open at 6:30 that are there ready to come in and eat.” Then there are the restaurant’s employees, “who are like family to us,” Mabry says. “A couple of them have been here for 40 years.” The hundreds of texts, phone calls and social media messages from supporters have helped her get through, she tells me. “We’ve made it through COVID, survived all that and now this happened.
